Pumpkin Chocolate Chip Cookies

I absolutely love pumpkin. Ralph's, year-round, has these amazing Pumpkin Chocolate Chip cookies. My mom first found these 2 years ago. They are huge and so light. We fell in love with them. I don't know how Ralph's does it, but they are heaven in your mouth. I wanted to try my hand at them last year and found a recipe on allrecipes.com. This year, I made another batch, but did the whole recipe this time, coming out with 55 cookies! I gave bags away to 4 friends and family. Everyone enjoyed it. My family loves how these cookies are so fluffy. My sister said they are like pillows! Baking it for 13 minutes rather than 15 keeps the soft texture.

The recipe can be found here (I didn't use walnuts). I used an ice cream scooper to try and keep all of my cookies a uniform size. I also never have nutmeg, so I threw in some ground ginger and cloves. Nutmeg would be nice to have one day...Oh, and I also changed half whole wheat flour and half brown sugar, just so I could get my favorite nutty, hearty flavor in there. Pumpkin may be associated with the autumn holidays, but this shows that pumpkin is a treat to be enjoyed throughout the year!

  1. I have the secret to Ralph's pumpkin chocolate chip cookies! They are my favorite and when we moved to Japan, I was so sad to not have access to them anymore.

    Not any more. I'm almost annoyed at how EASY they were to make. Try this out, seriously, you won't be disappointed.

    Ingredients:
    2 boxes spice cake mix
    1 large can pumpkin pie filling (not pumpkin puree - you want the one that actually is the filling in a can)
    1-2 cups chocolate chips

    Preheat your oven to 400ยบ. Ready for this? mix it all up, drop them out in large spoonfuls on lightly greased cookie sheets and bake them for 12-15 minutes.

    And that's it. Seriously. Give it a shot. You will be shocked! I swear they taste like Ralph's cookie clones. :)

    1. I wanted to make these. Do you mix up the spice cake as directed on the box? Also, which kind of pumpkin pie filling do you use, the "pumpkin pie mix" in a can?

  2. Kari- I tried your cookies with the spice cake and the pumpkin pie filling. The taste to Ralph's pumpkin chocolate chip cookies is spot on! The texture out of the oven is a bit different but after storing them in a tupperware overnight I was pleasantly surprised that they even look like the cookies you buy at the store! I used a 3 tablespoon scoop and made the recipe yielded about 3 dozen cookies for about $6 in supplies.
