Low Fat Chocolate Sour Cream Cake and decided to make this because of how simple the recipe was! Just 7 ingredients, mix it all together, bake and voila! Beautiful chocolate cake that isn't too sweet or dense.
The cake rose nicely, but it doesn't have as many air pockets as, say, a sponge cake. It was moist but not dense and cloyingly chocolately sweet. The texture was soft, with the slightest texture of marshmallow.
I am going to make this time and again whenever I have a chocolate or cake craving or have to bring something to a get-together on short notice. It is a simple recipe that delivers!

1 cup all purpose flour (I used Ultra-grain flour)
1 cup granulated sugar
1 cup sour cream
1/2 tsp vanilla
3 tablespoons Dutch processed cocoa powder
1 tsp baking soda
1/2 tsp salt
1. Preheat oven to 350 deg Fahrenheit. Line an 8x8" square baking pan with lightly greased parchment paper.
2. Mix all ingredients with an electric mixer until smooth and thoroughly combined. Pour into prepared pan.
3. Bake for 25-30 minutes. Cool for 5-10 minutes in the pan, then tip out and cool on a wire rack.
You can eat it warm after taking it out to cool a bit on the wire rack. It's soooo tasty. I took a 1/6 slice right down the center and cut this into 6 slices. I was going to eat just one to taste and make sure it was good to take to the party tomorrow, but holy cow!!! It was so tasty I just kept eating the entire slice!!!! And what's great is that I ate this after eating dinner plus pudding, fruit, and cake, and didn't feel like I was going to burst! It's not a heavy cake, but it definitely hits all the tasty enjoyment points. I really recommend trying this easy show-stopper of a cake!
